Slicen Dyson Smoked Meats operated as a food truck and caterer for its first two years. Food was prepared in Dyson's parents kitchen, with meats being smoked on the back patio. It was then hauled in large coolers to keep it at proper temperature, being transported by car for private events or food trailer for public ones. The majority of business was private catered events in addition to food truck events at places like Big Truck Brewery, Farmacy Brewery, and Pickett Brewery.Â
